Today we bottled the 2011 Brut Rosé. I have to say, normally I'm not as excited as Susan is about the bubbles, but I think this one is going to be a sensational drink. The strawberry jam aromas around the bottling line had a very alluring component and will only be enhanced with the bottle fermentation. This may even be our best bottling of our Brut Rosés to date.
Now the wait is on while the yeast do their thing and make those wonderful tiny bubbles.
