Who we are:
Heart and Hands is owned and managed by husband and wife team, Tom and Susan Higgins. We are committed to producing cool-climate wines which express the terroir of the Finger Lakes. We focus exclusively on Pinot Noir and Riesling, from which we create still and sparkling wines. We are a boutique winery, producing around 2,000 cases per year, which allows for an intense focus on quality.
Heart & Hands Wine Company's winery and estate vineyard are located on the east side of Cayuga Lake. We invested a significant amount of time on site selection, poring over county soil maps, going on scouting excursions, and researching the geology of the region to find the most optimal location for growing Pinot Noir. Heart & Hands is located about 200 meters from the shoreline of Carr's Cove. The vineyard has several different soil types, with Onandaga Limestone underpinning the entire site.
Our winemaking philosophy is simple: we utilize a minimalist approach in order to preserve the flavors and aromas of the grape in the final wines, and we seek to understand the expression of each vineyard site. The grapes are hand-picked, and then hand-sorted to eliminate any fruit which does not meet our quality standards. We employ gravity flow production methods, allowing the grapes and wine to flow downward from our upper crush pad, and minimizing the need to utilize pumps. We ferment our wines in small batches, separating individual vineyard lots into separate tanks and barrels, which allows us to gain a deeper understanding of the unique sense of place inherent in each vineyard. We believe that this focus on quality allows us to craft the best wines possible from these Finger Lakes vineyards.
